Happy Hour is a good ole tradition where folks hit up their favorite restaurant, bar, stadium, or state/county fair, for affordable alcoholic drinks, such as beer, wine, and cocktails. Sometimes free or discounted Hors d’oeuvres are offered as well. I personally love a good Friday afternoon Happy Hour, especially if my friends get out of work early for Summer Fridays. Since summer is winding down, I wanted to grab onto what’s left of it. During summer and Happy Hour, I often go for refreshing cocktails, nothing too strong or overbearing, because it’s too darn hot in New York City for any strong alcoholic beverages. During my recent vacation in Aruba, I fell in love with coconut water all over again. Imagine lounging on the white sandy beaches of Aruba and a hotel staffer hands you a fresh coconut with a straw in it. So good! To capture that moment, I wanted to create a delicious drink with coconut water and tequila, to make the ultimate Happy Hour cocktail. This cocktail had to be enjoyable enough for me and my friends to keep our minds off the cool fall weather that’s about to hit us on the east coast.
I pulled out a fresh bottle of Hornitos® Plata Tequila from my freezer, it was a bit frozen and that gave me the idea to make a slushy drink. Hornitos® is 100% Agave tequila, perfect for frozen drinks. My only problem with frozen or slushy drinks is the taste. They become watered down and bland quite fast. To avoid that from happening, make coconut water ice cubes! To achieve this, all you have to do is fill up your ice tray with coconut water. Let it sit in the freezer for about 20-25 minutes. Then place all of your cubes into a blender to make it extra slushy. Luckily my blender has a margarita setting. While the magic was happening, I poured in Hornitos® Plata Tequila and squeezed in fresh lime juice for that much-desired margarita taste.
The latest trend in bartending is mason jars. Purchase a few and pour your drinks in them at your next gathering. My local grocery store had a few on sale and I use them every chance I get, like for my Happy Hour-inspired cocktail.

Ice tray
Coconut Water or Coconut Milk (whichever you desire)
1/2 cup of Hornitos® Plata Tequila
1 Lime
