Dum Pukht is a cooking technique developed in the Awadh region of India. Using a tightly sealed pot, vegetables and meats are prepared over low heat with a mixture of herbs and spices. Slow cooking allows the flavors to develop and mature to their highest potency. We experienced Dum Pukht via a small intimate soiree in Awadh, an upscale Indian eatery on NYC’s upper west side. Guests enjoyed specially prepared Kebobs, an array of roasted meats and Biryanis which are standard for a proper Dum Pukht feast. All dishes were crafted by accomplished restauranteur and chef Gaurav Anand.
Chef Anand is responsible for bringing the authenticity of Dum Pukht to NYC. After visiting the Awadh region of India, he was so taken with the complexity and unique flavor profiles he mastered the ancient technique and brought it back to the city. Though New Yorkers are familiar with Indian cuisine, Awadh offers a new and exciting option for those who haven’t experienced Dum Pukht cuisine. A unique prix fixe lunch special (vegetarian, chicken or seafood – ) with multiple courses brought to the table will be offered every day from 12pm – 3pm. Dinner is served from 5pm – 11pm daily.

- For the wine program, Anand enlisted acclaimed sommelier John Slover (Daniel, Cru, Charlie Bird) to create an accessible global winelist that pairs well with the intricate flavors of the menu. Slover’s list will feature a section of wines beyond the traditional complements for Indian food designed to let diners explore unexpected pairings with the dishes.
- The tea program is designed by second generation tea producer (and tea sommelier) Anamika Singh of Anandini Himalaya Tea. Singh’s teas are estate grown on a family plantation in northern India in the foothills of the Himalayas and then blended with Himalayan herbs and flowers, as well as spices from southern India. Awadh will feature a selection of Anandini teas, all shipped directly from India.
